To facilitate a less formal interaction between conference delegates, speakers and guests, a conference dinner has been organised for the Tuesday evening in the magnificent main function room at Rydges World Square.
The evening will commence with a free cocktail at 1830 and will be followed by a sumptuous three-course alternate drop dinner. A 3 hour drinks package will also be included in the dinner price.
The main function room at Rydges provides a superb setting for this event.

Chargrilled Lamb Cutlet, Skordalia, mint salsa
Candy Pork Belly, Grapefruit caramel, blackened peppers
Main:
Gippsland Eye Fillet. Tarragon, crushed peas, potato, chive, jus
Roasted Chicken breast, potato puree, Dijon sauce, king mushroom, watercress
Dessert:
Roasted Macadamia cheesecake tart, coffee gelato, caramel sponge
Chocolate Textures, dark chocolate sponge, milk chocolate bark, caramelised white chocolate, chocolate mousse
